Grida Head Soup

Grida is one of the most valuable fish species in the Mediterranean Region. It is cooked in various ways in Antalya Cuisine and consumed with pleasure.
 
To cook this nutritious yet delicious soup, whole onion and bay leaves are put into the boiled water, and the head of the grida fish is thrown and boiled. The heads taken from the pot are left to cool. It is cooked by putting potatoes, celery stalks and lemon slices in water to boil. The skin and bones of the boiled heads are removed, the white fleshy parts are thrown back into the water and all the ingredients are cooked for about an hour. A smooth slurry of tahini consistency is obtained by mixing flour and water to give consistency to the soup. It is added to the soup together with butter and boiled until the smell of flour disappears and the consistency of the soup takes hold. Grida Head Soup is served with cinnamon sprinkled on top if desired. You can experience this unique taste that reflects the Mediterranean culture in many fish restaurants in the city.
